Tasty Tuesday: Pizza Grilled Cheese

Everyone gets in a hurry and wishes that they didn't have to cook a big meal.  This happens to me ALL the time!  The other day, not only did I not feel like cooking, but we didn't even have any food for me to cook.  So, I was off the hook! haha  I decided to make us some grilled cheeses, but not just any grilled cheese, peporoni grilled cheese.  Any grilled cheese worth eating HAS to have 2 pieces of cheese! :)  Just kidding, but I always use 2 pieces.  So when making these, I just put the peporonies in between the pieces of cheese.  Afterwards, we dipped the peperoni grilled cheese into pizza sauce and it was ummm ummm good and the best part of all was that it only took about 10 minutes.

If you have any little nuggets running around then I bet this would be a hit at your house!

Tasty Tuesday: Taco Soup

Time: 20 minutes prep + 5 hours in the crock pot or 1 hour on the stoveYield: 10 servings

Ingredients
1  lb ground beef
1  onion
3  14.5oz cans Mexican stewed tomatoes
2  15oz cans kidney beans
2  15oz cans black beans
2  15oz cans corn
1  8oz can tomato sauce
1  6oz can tomato paste
1  taco seasoning packet
1  lime
2  C water


Directions

Step 1:  Put chopped onions and ground beef in skillet.  Cook until the meat is brown and onions are soft.

Step 2:  Put tomatoes in a blender and blend until the tomatoes are chopped.

Step 3:  Drain and rinse kidney beans and black beans.

Step 4:  Place all ingredients in crock pot or soup pot.  Stir all ingredients to combine.

Step 5:  For the crock pot cook on high for 5 hours.  For stove top let soup come to a boil, reduce heat to medium low and let simmer for 1 hour.

Step 6: ENJOY!


Tips:

* I literally cannot chop an onion without crying for 30 minutes afterwards, so I use minced onions.  You can get it in the spice section.  I always use this anytime a recipe calls for an onion.

* I didn't have a lime, so I used lemon and pepper seasoning!

Crispy Chedder Chicken

     Tonight I decided to try a new recipe that I found on a blog that I follow.  Jamie Cooks It Up! is full of wonderful recipes.  I am a busy little bee, so I don't have time to slave away in the kitchen for hours at a time.  This recipe takes about 10 minutes to prepare and 45 minutes to cook.  It is ummm ummm good!  We love cheese in our house.

Crispy Chedder Chicken
Time: 15 minutes prep + 35 minutes cooking
Yield: 7 serving

Chicken:
4 large chicken breast
2 sleeves Ritz crackers
1/4 t salt
1/8 t pepper
1/2 C milk
3 C shredded chedder cheese

Sauce:
1    10oz can cream of chicken soup
2 T sour cream
2 T butter

1. Crush Ritz crackers
2. Cut chicken breasts into three strips

3. Dip strips into milk, then cheese, then crackers

4. Spray bottom of pan/casserole dish with cooking oil.  Lay strips of chicken into pan.  Cover with aluminum foil and cook on 400* for 35 minutes.  Take chicken out, remove aluminum foil and place back in the oven for 10 more minutes.

5. To make sauce: combine soup, sour cream and butter in a sauce pan.  Cook over an eye on the stove and stir with a whisk.  When finished pour the sauce over chicken for a creamy delight!


                 Tips:
- Push cheese and crackers into the chicken to make it stick
- Make sauce while chicken is cooking to save time
- Don't have cream of chicken soup? Use cream of mushroom (That's what I used!)

This is a quick delicious recipe.  Throw some SteamFresh sides in the microwave and you have a tasty meal!
